The fertile
land of Indus valley grows various types of pulses (Daalain) at its lands. Urdu
word “Daal” is called pulses or lentils in English. Also beans are part of
pulses. Pulses are a regular part of Pakistani and Indian cuisine. Any house
grocery is incomplete without different type of pulses in a cart. The pulses
are available as whole, skinned or in a split form. A term “Whole Gram” means
any “Sabat Daal”: sabat moong, sabat massor etc. The word “Skinned Gram” is
used for “Dhuli daal” or without chilka daal : dhuli masoor, dhuli moong etc.
The “Split Gram” is used for daal that has been break from whole for example
daal channa is a split form of “black chickpeas”. These pulses are cooked with
variety of recipes. Before telling you the English meaning of each Daal, let me
tell you an interesting fact of my childhood that is related to differentiating
among different Pulses (daal).
I told above
that different type of daal is a necessary part of every grocery list in India
and Pakistan. At my young age, when I started to help my mom in the kitchen, I
remained confused between name and appearance of different daals. Whenever my
mother asked me to take out for example: daal moong, then I asked her to tell
the color and shape of daal instead of name. “Peeli or pink”, “kali ya harri” I
just asked her? I remained confused between daal moong, daal masoor and daal
mash. Above all the types, my mother asked like dhuli moong, sabat mash etc. and
it was real challenge to differentiate between different pulses, for me. I can
guess still young girls ask the colour of daal instead of name. Keeping in view
the confusion, here I made it easy to provide a related mage with each daal
name in English and Urdu.
Many mothers
remain worried of fact that most kids and family members don’t like to eat daal
salan (curry). At the end, I have told few popular and delicious recipes where
you can add pulses or daal and nutrition in your daily routine without fussing.

NUTRITIONAL VALUE OF USING DAAL
Pulses (
daal ) and beans are rich source of protein
and have lot of nutritional benefits. Pulses can be replaced with
chicken, mutton and beef to get enough protein. Also there are many Daal
recipes in Pakistan where Daal is cooked with different type of meat to get
taste and nutrition.
Popular Food & Recipes that are made of Daal
Haleem
Haleem is
one of most cooked curry in Pakistan. Haleem is a mixture of 4-5 daal, meat and
wheat cereal. This dish is very delicious and has all nutrition from different
pulses.
Khitchree
Khitree is
one of the popular dish to be cooked for toddlers and sick people. It is made
of rice and daal moong.
Shami kabab
Shami kabab
are widely used in sandwiches, burgers or with rice and roti throughout
Pakistan. These delicious kabab are made of Daal chana and meat.
Recipe:
Take one cup
daal chana, 1kg meat(beaf/mutton), garam masaley, salt, 1 onion chopped, 7-8
garlic cloves, 1 piece garlic, 1 spoon Lal mirch. Add all ingredients with 5
cup of water and let it cook for 15 minutes in a pressure cooker.
After 15
minutes, mash meat with daal finely. You can use chopper to mash the mixture.
Add green chilies, onion, corrindor(dhaniyaa) and make shami kabab after taking
a portion from chopped mixture. Put shami kabab in a flat tray and freeze them.
Once the shami kabab are frozen, take them out and now store them in freezer in
box or plastic bag for long use.
Daal Chawal
You’ll very
few people in Pakistan ho don’t like daal chawal. Different type of Daal,
rajma, kaley channey, sufaid channey are much loved with boiled rice in
Pakistan. You can also change Boiled rice with simple tarka rice to take
enhaced flavor of dish. Also trying different daal each time with rice will
give variety of taste to your family.
