Chinese dumplings-perfect Chinese recipe in local style &
flavor
Chinese Chicken Dumplings is a traditional Chinese dish which
tourists from the world enjoy at is street stalls of Shanghai and Beijing.
Anyone who is Chinese cuisine fan looks for the unique Chinese dumpling flavor and
shape at home. Dumplings can be made
with variety of fillings from meat to vegetables with bread like dough. After finding halal chicken dumplings in
Beijing, we come up with traditional Chinese dumpling recipe for you that will
take you to the Chinese aroma:

Ingredients:
For Dough
All purpose Flour (white flour) 3 cup
Oil 1 tb spoon
Salt to taste
Luke warm Water 1 cup
Egg 1
Note: Use egg yolk to attain yellow colour of wrappers.
Some of dumpling wrapper recipes are simply made with Flour, salt and egg.
I prefer to use equal amount of white flour and wheat flour to enhance the nutritional value of dumplings.

For Chinese chicken dumplings filling:
Chicken mince/beef or mutton mince/fish 250 gm
Onion chopped 1
Garlic chopped 3
cloves
Salt 1
tb spoon
Red pepper ¼ tb
spoon
Black pepper ¼ tb
spoon
Vinegar
1 tb spoon
Soy sauce 1
tb spoon
Spinach
2-3 leaves
Cabbage (sliced) 1
cup
Green chilies (finely chopped) 3-4
Carrot (finely chopped) 1
Mushrooms (finely chopped)
Sesame oil (optional) 1 tb spoon
Fresh green Coriander
Method :
- How to make dough & dumpling wrappers at home for chicken dumplings
The dough for the dumplings is very much same to the dough of
bread. First take flour in a bowl. Add egg, yeast powder, milk, salt,
sugar in it and twist it until the smooth dough is ready.
Let the dough to set for 20 minutes and twist it again to make
perfect dough. Now roll the roll on shelve lengthwise and cut equal portions from there.
Take small portion from dough and flat it with a rolling pin, same as you make roti with rolling pin.
Cut circles from the flattened dough using any sharp round lid.
Put all circles in one try.

- How to make filling of Chinese Chicken dumplings:
Heat cooking oil and fry garlic cloves until it smells bright.
Now add chicken mince and fry it for 2-3 minutes. Add spinach, carrots, mushrooms,
salt, black pepper, vinegar, soya sauce, onion, sesame oil in it and cook until
chicken mince is ready and cooked. Add green coriander at end and mix it well.
Next beat one egg in a bowl.
Now take one dumpling covering or circle in hand and brush it with beaten egg on all sides. You can also use wet hands to bind the dumpling other than egg.
Now fill in the filling and fold the cover just in a shape of dumpling.
A perfect Dumpling shape requires a practice but it’s a
technical use of thumb and palm which let you make a perfect dumpling shape.
Like same, fill in all coverings and put dumplings in one
tray.
Once all chicken dumplings are ready, it’s time to steam them.
- Difference of samosa & dumplings
Now our Pakistani & Indian home chefs must thinking that
what is the difference between our samosa and Chinese dumplings then here are
the difference guys. Samosas also have covering made of white flour dough. They
are also filled with mince, vegetables and potatoes and have a unique
triangular shape but Samsoas are deep fried but dumplings are steamed at end.
- METHODS TO BOIL, STEAM OR FRY TO DUMPLINGS.
- One traditional Chinese style to cook dumplings is to boil them. Let 1 litre of water in a big pan and let it to boil. Put dumplings in boiling water and take it out when dumplings start floating and ready. It hardly take 3-4 minutes It’ll look semi-transparent when boiled properly. Don't overcook dumplings.
- The next method to cook Chinese Chicken Dumpling is to fry them in a little oil on medium heat in a pan. When dumplings are little brown then put one cup water in it, cover with lid and cook for 5 minutes until the water is dried. Dumplings are ready to serve.
- Third method to cook the dumplings is to steam them using steamer or steam them potting above boiling water in another pan.
- Some may also use air-fryer to cook dumplings.
To get the real Chinese flavor of Chinese dumpling is to avoid deep frying them like samosas.
To satisfy the local flavored tongue, you only pan-fry dumplings.

Tip:
Sometimes green spinach juice is mixed in dumpling dough to color it green and you can try it too.
Chinese salt in Chinese cuisine; Some may ask to use Chinese salt in Chinese dishes to enhance flavor. You shouldn't use Chinese salt regularly as it has shown side effects like headaches, upset stomach and asthma etc. The Punjab food Authority in Pakistan also have banned Ajinomoto or Chinese salt after scientists found health hazards in the salt.
